Get to the essentials of the knife with the Kanso. No frills, stripped of all superfluous. One blade and one handle.
Kanso is a Japanese concept that can be summarized as follows:
Kanso (簡素) : Simplicity, stripping away all superfluity, emphasizing the essential.
Spalted Beech: Unique wood, marked by dark veins and patterns created by a natural fungal process. Beech symbolizes simplicity and solidity.
Ziricote: An exotic and luxurious wood, known for its unique dark grain patterns on a medium brown to black background. Ziricote symbolizes elegance and exclusivity.
As the wood is always different, each knife is completely unique and may vary from the model shown in the image.

9cm stainless steel blade, thin and versatile.
I chose these blades from Pallarès Solsona, founded in 1917 in Spain, for their refined design, but not only that.
These blades rocked my childhood and adolescence, this forge being based 1 hour from my home, these versatile blades were everywhere around me, they are easy to sharpen and I have always appreciated their sharpness and their aesthetics.
INTERVIEW
To best preserve your Kanso, avoid prolonged contact with water (especially the dishwasher) and chemicals. These simple cares will guarantee the beauty and durability of your knife.
